This month I’m sharing a recipe the is really easy AND my whole family absolutely loves it, pot pies!
4 cups chopped cooked chicken
4 cups mixed frozen vegetables (two 12 oz bags)
1 jar (16 oz) Alfredo sauce
1/2 cup milk
Grated Parmesan cheese
1 can Pillsbury garlic bread sticks
For the chicken, you can throw any combo of breasts or thighs in the oven at 350 degrees for about 30 minutes or you can just buy a roast chicken from the store and tear off pieces. We like to use a couple breasts, a few thighs, cook them, and cut them up.
After the chicken is prepared, preheat the oven to 400 degrees. Pour the Alfredo sauce, vegetables, and milk in a large pot over medium heat on the stove. Last time we made this I threw in some garlic for extra flavor and it was delicious! Heat through and scoop into six 8 oz oven-safe ramekins.
Twist the bread sticks and lay them over the top of the chicken mixture. Sprinkle the Parmesan over the top as desired and place on a cookie sheet.
Cover with foil and bake for 15 minutes. Remove the foil and bake for approximately 10 more minutes, until mixture is bubbling and bread is browned. Be sure to use a pot holder when placing on plates for dinner!
