Hey loves! I’m so excited about this new guest post series that I’ve set up with Ashley from From the Heart of Mom!! Some of you might remember her from her guest post back in April while I was out of town. She has agreed to guest post the first Monday of every month in a series we’re calling “Monthly Meal Monday”. I love trying new recipes so I’m excited to have something new to try every month!
Hi! I’m Ashley and I blog over at From the Heart of Mom! Thank you so much to Kelly for asking me to do a recurring guest post on her blog. I hope you guys enjoy these recipes as much as I enjoy trying them out and sharing them with you!
Today’s recipe has been a favorite in our family for as long as we’ve been a family. I’m not sure where the recipe came from, it was just one of those that was scribbled on the back of an envelope in a huge stack of recipes at my mom’s house. It’s a staple in our house because not only do my husband and I love it, but the kids love it too!
1 – 1.5 lbs boneless skinless chicken
2 cans cream of chicken
1/3 cup water
6 slices Swiss cheese
6 oz dry stuffing
1/2 cup butter, melted
Preheat oven to 350 degrees. Place chicken in a 9 x 13 pan.
I like to get this chicken from Costco. It comes in packs of 6, each pack has 2 breasts or 4-5 thighs. They’re easy to just throw in the freezer and cut one off as needed! I use one pack of breasts and one pack of thighs with every chicken recipe…
…that way light and dark meat eaters are both happy with every chicken dish.
Cover the chicken in a layer of swiss cheese. Mix soup and water together, pour over the cheese. Pour dressing over the soup mixture and top with melted butter.
Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes. Serve and enjoy!
